  • Limelight uses all cage-free eggs
  • Our cuisine is thoughtfully prepared without additives or preservatives using the healthiest product available. We request that our distributors buy from local producers and from socially and environmentally responsible producers.
  • We eliminated trans fats 5 years ago.
  • Fair trade purveyors are our first choice.
  • We try to integrate local, sustainable, seasonal and organic foodstuffs into our menus at all times without requests.
  • We shop at Chicago’s Green City Market from a wide variety of vendors. Genesis Growers, Green Acres, Nichol’s Farm, Growing Power, Growing Home, Tiny Greens, Tomato Mountain are all terrific sources of produce. Prairie Fruit Farms and Capriole Cheeses, Mint Creek Farms Lamb are also excellent sources for cheese and meat.
  • Although we rely on the local, national and global food systems to meet the needs of a diverse group of clients, we are a source of pressure for an increasingly more local, sustainable and socially responsible food system.
