Leave a lasting impression on holiday guests with a refreshing and delicious drink to welcome them, and a cup of Cocoa for the road.
SANTA'S LITTLE HELPER
2 or 3 shots gin
A hint of vermouth
1 splash pomegranate juice
Pomegranate seeds in the bottom of the glass
CHAMPURRADO (MEXICAN HOT CHOCOLATE) WITH TEQUILA
3/4 cup Masa Harina (tortilla flour)
4 cups warm water
4 cups milk
6-1/2 oz Ibarra Chocolate (Mexican chocolate with cinnamon)
2/3 cup dark brown sugar
1 tablespoon molasses
Super-premium Añejo tequila
Combine Masa Harina with ½ cup warm water in a blender. With blender on low, slowly add remaining water and process for 15-20 seconds or until thoroughly combined. Pour into a saucepan, add: milk, chocolate, sugar and molasses, whisking constantly over medium-low heat until sugar and chocolate are completely melted. Strain through a fine mesh strainer, or sieve, into a clean saucepan or thermos. Keep warm until ready to serve. Serve a mug of warm chocolate with a snifter of sipped tequila. Makes about 10 cups.
Merry Christmas, Happy Holidays and a wonderful start to 2008 from everyone at Limelight.
